Abstract

The objective of this research was to determine the drying rate of golden berry (Physalis Peruviana L.) in three types of solar dryers: direct, indirect, and mixed. Prototypes were designed and built, and tests were carried out under specific weather conditions. Drying rates were 0.0287, 0.0208, and 0.0407 kg of water/hour·m², respectively, with drying times of 41 hours for the direct dryer, 56 hours for the indirect, and 29 hours for the mixed dryer. Solar drying is a viable, economical, and natural alternative for food dehydration.
