Intelligent pH indicator film based on PVA/Glycerol/Anthocyanin derived Ipomoea Batatas (L.) Lam for smart food packaging

Food safety and quality are important aspects of consumer health and wellness. The application of an intelligent pH indicator in food packaging would give significant advantages in straightforward and quick information regarding the condition of the food. This study used purple sweet potato to extract anthocyanin (ANC) as a natural pH indicator. Variation concentration of extracted ANC (1, 3, 5, and 10wt%) was incorporated with polyvinyl alcohol (PVA) and glycerol as plasticizers to produce films for pH 1 to 13 indicator. The film’s characterization shows changes in FTIR spectra peaks and surface morphology attributed to the interaction of the materials. The films exhibit increased thermal stability, variations in water solubility, swelling index, and water content with changes in ANC concentration. These films also demonstrate color changes that can provide quick and accurate quality information of food condition.
